valentines is coming...

We have never been really big Valentine people.  I need no chocolate, diamonds, flowers or fancy meals.  I would rather for people to show me they love and appreciate me the rest of the 364 days of the year than in one day.  Jay does a pretty good job at that, so we have really never been big into this holiday. I think it is sweet and I like to celebrate it more with the kids in my life.  Nephews, nieces, students and of course, Charlotte.  Thinking of the upcoming holiday, I have whipped up a few valentines to go to those extra special kiddos in my life. Valentine for that super cutie that is so young, sweet and as cute as a button!  With this valentine I am sending a picture frame covered in buttons.

Of course a tricky little play on words for the fifth grades.  These will be given with a lollipop that has a fake mustache attached on the stick!

And last but not least, I want to make sure that the other teachers on my team at school do not feel forgotten.  I always want them to know that I think we are “mint” to be, no matter how crazy the school year gets!

sleepless nights

I am currently sipping on a diet lemonade that I found around 3:30 this morning in the dining room from last nights dinner.  Gross, I know, but I guess I think if I was drinking it at 3:30 and didn't die I can keep drinking it now, at 6:30. Last night was another long night.  Better than the previous night, but still full of drama.  After borrowing a friends machine and deciding that there is no way I am going to be able to quilt on it Jay, C and myself headed out  shopping for a new machine.  The closest JoAnn Fabrics that is currently not under major renovations and sells machines is roughly 45 minutes away.  We made the long haul, ended up getting a way better machine than I thought I would get, spent more money than I thought I would, had dinner at chick-fil-a (hmmm...diet lemonade) and made the long journey home.  After putting C in the bath and then in bed it was time to start sewing, or so I thought.

It turns out suddenly owning a very smart machine + being pretty tried at the end of a long day + flenching at every noise the machine made (remember the flying shrapnel) = one night of nothing but tears, stress and going to bed at nine.

After I had been awake  for a little over an hour after feeding C at 2:15 last night, I decided to just get up and try again.  Needless to say, I figured it out, kinda.  Me and the machine are still not old chums like me and the old one, but I know relationships take time.  After all, doesn't everything new you bring into a family unit cause you sleepless nights? Husbands (giggle), puppies, babies and now the sewing machine.

So the other day I’m heading to our local grocery store with Charlotte and like many other times Melissa needs me to pick up a few things. This time around it’s ingredients for a recipe that she found on you guessed it...Pinterest. Nowadays when Melissa is looking for a new recipe she doesn’t head to recipes.com or even food network’s site...no she heads first and foremost to Pinterest. The place to go to discover, compare and in this case, the place to go in order to find something to do on a Saturday night. Let me tell you what I mean.

So I pick up the ingredients. A little butter, light corn syrup, brown sugar and a few more odds and ends. Couple this with the fresh apples we picked last weekend and you’ve got a wife who is interested in making carmel covered apples. And not just the regular kind mind you. Melissa wants to first slice the apples insert toothpicks and make carmel apple slices, because, “everything is better when it’s miniature.” After consulting with both of our mom’s she doesn’t receive a good report. Her mom tells her to call my mom, so not a whole lot of help there. My mom says first of all, “carmel is very difficult to make.” And secondly, if you accomplish in heating it to exactly 248 degrees, “you probably won’t be able to get it stick to the apple flesh” due to something about pectin. But one thing I love about Melissa is that she’s not afraid to try and she always wants to prove people wrong (I hope Charlotte inherits some of that). So what would have been a fairly relaxing and lazy Saturday night at the Hess house suddenly turned into Willy Wonka’s candy shop.

Melissa bathed Charlotte and I put her down for the night, but before I went upstairs to put Charlotte down Melissa let me know that we needed to make the carmel apple slices tonight because tomorrow was going to be busy. Now I could have declined this candy making apple extravaganza completely, but I have to admit that after we shared a delicious carmel apple in Seattle a few months ago I was interested to see if we could really replicate something so delicious in our very own home. So I melted some butter, Melissa measured the brown sugar and corn syrup and I began to stir over medium until it boiled. While I stirred, Melissa cut apples and pierced the slices with toothpicks. Remember, “everything is better when it’s miniature.”

I stirred for a long time and that’s when Melissa broke out the white wine and man she hit it hard...just kidding, but the photo is funny. We slowly got the temperature up to 248. I kind of felt like Marty from Back to the Future trying to get the car up to 88mph while trying to produce the 1.21 gigawatts necessary to to make things happen. Eventually it boiled we added some sweet condensed milk and eventually some vanilla and voila, carmel.

Now for the moment of truth. Would it stick to the apple flesh? Come back next week to find out

Just kidding!!!

It did stick! Pretty well at least. It definitely stuck better to the skin than the flesh, but I think we were pretty pleased with the results. We chopped up some peanuts and sprinkled the slices with the nuts and some mini m&m’s.

Overall it was a pretty fun project. We both got a little bit of hot carmel on our hands but survived and what would have been a dull night sitting on the couch was a fun moment where once again, as much as I make fun of Pinterest, it has some great content and has produced some great food, home decor and general humor in my life. So the next time Melissa starts talking about the next big idea she found and wants to try I’ll probably respond by saying, “Yes, that sounds ‘pinteresting’ to me."

mr. and mrs. vacay

We have always said that when we have kids we wanted to make sure that we took time for just the two of us.  We know that it is so important to have time to ourselves, especially when we are both working and life starts to get crazy.  Although we have not done that great on the one date a month, we have recently been able to complete our first mr. and mrs. vacation, just the two of us! For our first mr. and mrs. vacation we went to Seattle, Washington.  Neither of us have been to Washington, Southwest flies out there, and we had willing grandparents willing to watch Charlotte for a couple of days...it was perfect.

We had a great time, doing things that would be difficult to do with a five month old on a very rigid nap schedule.  Here are a few of our favorite things...

Meals with no baby on my lap.  Although we were strongly encouraged to go to an indian reservation and get fresh caught salmon by some old bird on the plane, we opted for Ray’s, a lovely and pretty famous waterfront restaurant.

Go on a ninety minute tour of the Boeing plant.  This would have been out of the question if we weren’t flying solo, this tour had some crazy strict rules, one being no children under four feet.  We know Charlotte is tall, but not over four feet yet.  This tour was great and Jay was in little boy heaven!

Hike up a huge snow covered mountain.  Mt. Rainier was amazing. You can see it from almost everywhere in Seattle and it really reminded us of our honeymoon at Lake Louise.  The trails were still covered in snow, so some of the hike was a little scary at times and we ended up doing a good amount of “skiing” down the mountainside by keeping our feet still and just sliding down.  This is one of the most beautiful places we have been to!

Touring the city.  We walked this city up one side and down the other!  We were pooped at the end of the day, but got to really experience the city and all of the hills that go with it!

We really did have a great time.  It was so nice to be able to come and go as we wanted, chat through dinners and sleep through the night.  Our first mr. mrs. vacation was a great success!

It would not have been possible without Grandma and Grandpa Hess.  They had a great time back in quaky virginia!
